Madagascar, a land of exception

Our vanilla is rooted on the east coast of Madagascar, in the famous SAVA region (Sambava, Antalaha, Vohemar, Andapa). This territory enjoys an ideal humid tropical climate, with temperatures between 18°C and 30°C and abundant rainfall that favors the cultivation of vanilla orchids.

This region produces nearly 85% of the world’s vanilla and forms the economic heart of countless farming families. The vanilla grown here, plump and oily, develops delicate, floral and warm cocoa aromas that have earned it international acclaim.

More than a spice, every pod is the result of daily dedication in the heart of Madagascar, where our teams rigorously select the best harvests from Sambava. By mastering every link in the chain — from manual pollination to traditional curing in wooden crates — we guarantee a vanilla of rare intensity, rich in aroma and impeccably fresh. — FROM FIELD TO FRAGRANT POD —

A demanding, artisanal know-how

Transforming green vanilla into a fragrant black pod is a true art that requires patience and expertise. Every step is carried out by hand with meticulous care.

  • Manual pollination: each flower is hand-pollinated within 12 hours of opening.
  • Selective harvest: pods are picked individually at optimal ripeness.
  • Blanching: dipped in water at 63°C to stop ripening.
  • Steaming and drying: aroma development and gradual moisture reduction.
  • Curing in trunks: the pods rest for up to two years to reach full aromatic maturity and develop the prized vanillin frost.

— EVERY POD HAS ITS PURPOSE —

Grades for every use

Professionals grade vanilla according to several criteria: moisture content, length, appearance and absence of defects. These grades determine the ideal use for each pod.

Gourmet / Grade A
Moisture > 25%, plump, supple pods with no splits or scars. Ideal for pastry, desserts and preparations where the seeds are showcased.

TK / Grade B
Moisture around 25–30%, slightly less plump. Perfect for extraction, flavoring, long infusions or perfumery.

Extraction / Type Europe
Lower moisture (20–25%), drier pods. Used by industry for the production of vanilla extract, powder or paste.
